Two popular Vietnamese Street Food in Thanh Da Market are Fried Chicken with Boiled Broken Rice and Grilled Pork with Vermicelli. Most Vietnamese, especially young people really love it. It not only is cheap, but also is delicious.

This is the main place for selling of Thanh Da people. In market, there have many food stores. They are really cheap but I have to admit that the flavor is delicious as well. And for me, fried chicken with boiled broken rice and grilled pork with vermicelli are most amazing.

Next add a little fish sauce and season to suit your taste. Continue fry until the sauce becomes thick. Turn off the heat and you can serve it. Remember, use when it is hot is better. Most young Vietnamese people fall in love with this dish. The process for making it is really easy. Clean Snails, next steam them about 5 minutes. Then turn off the heat, throw away water and wait to get cold. Next step, add a little salt, chili powder and necessary seasoning for this dish into pan, roast about 2 – 3 minutes, season to suit with your flavor and add more snails into pan, roast more 5 – 10 munite to absorb all seasoning. And finally, you can serve it.

To sum up, each ingredient you can create many different dishes for yorself, family and friends. One of them is Sweet Snails. The ray dishes now become a popular street food in Vietnam, but I think the best way to enjoy it is coming to some beach cities like Vung Tau, Nha Trang, Long Hai, Da Nang.moreover, the best time for enjoying it is from January to the end of March of lunar calendar.

However, As I know, there are 3 main ways for cooking ray fish. Let us find out:

It is the easiest way of making rays but it is extremely delicious. All you need is a hot coal and some guise leaves. Putting the rays into the leaf and then put them onto the hot coal to grill. You just wait not more than 10 minutes to enjoy. The dish is tastier, if the rays are seasoned some ingredients, garlic, chili and lemongrass. The dishes are more fantastic if you drink some Vietnamese wine like Đế wine, Chuối wine. Some restaurant usually grilling the ray in front of the door to attract the customers, it is the reason this dish belongs to the Vietnamese Street Food.

Cooking curry is easy, you only need eggplant. The eggplant is cut into small parts which are similar with the size of rays’ part. Curry’ rays is also a low price dish, you could eat it with rice or noodles. The fisher man like eating the ray curry due to it has good smell.

Rays hot pot is one of my interests Vietnamese street food whenever travels to Vung Tau and Mui Ne. The flavors of rays are different with different vegetable and ingredients. In my opinion, the broth of rays is excellent when adding river leaf or tamarind due to it becomes sour and attracts the taste.

One more street food in Vietnam is Goby Fish. Goby fish is living mostly at the Southwest Vietnam, especially in Soc Trang, Bac Lieu, Ca Mau and Can Tho. However, you can easily buy it from any market in Vietnam. When processing the fish, you just rub it slightly by lemongrass leaves in some minutes and then clean it by fresh water. One remember thing, do not take off any pieces inside or outside of goby fish because all of them are good to eat. Goby fish can be cooked into four main dishes:

This dish is the most popular street food and it is also my favorite food. The hot pot is usually cooked with one more favorite flavor of Southeast’s people which is River Leaves (La Giang). When the broth is boiled, the live fish will be added into the pot. You have to keep the pot carefully, because the fish will turn and struggle strongly to get away the boiled water. After the fish does not move, it is time for eating. You can add vegetables into the pot like spinach.

There are many style of making this Vietnamese street food in my opinion, however, the grilled way is the best chosen. The fresh one is caught from the sea is the good one. Then, using the sharp knife to cut it, take the skin out and cut slightly some straight slice on the fish. Finally, adding some ingredients onto the fish and bring it on the hot coal. The good chef will grill the fish in the small fire, and turn the fish frequently to avoid it is too fire.

What I like most about noodles is the versatility of this Vietnamese Street Food. You can cook fried noodles, stew them or even cook them in soup. Recently, I had with me a couple of slices of pork loin and some French beans and I thought this would be the perfect opportunity to try out something new again. Hence, Pork Chop Noodle Soup (Mì Sườn Heo) was created. In Melaka, there is this famous Taiwanese Pork Chop Noodles but that is different from what I have cooked here. Whereas the Taiwanese Pork Chop Noodles uses soya noodles.

This Vietnamese Street Food is pretty due to the use of French beans and carrots for the contrast in color. This Vietnamese Street Food is also healthy as it contains carbohydrate, protein, fat and fiber. The French beans and carrots lend a crunchy bite to the otherwise springy noodles whilst the aromatic pork chop (which is cut into strips) becomes the highlight as far as the taste is concerned. Give this dish a try. You can use all kinds of noodles really. I would suggest soya noodles, instant dried noodles and even soba for this dish.

Using the blunt side of a knife / mallet, beat the pork loin slices till they are about 5mm thin. Marinade for 2 hours. Heat oil on high fire and fry pork loin slices till golden brown. Remove and set aside. Cut into strips.If using dried / instant noodles, blanch the noodles in boiling water till soft, rinse with ice cold water and plunge it back into boiling water just to reheat it quickly. Then drain and set noodles aside. Here is the important way to create this amazing Vietnamese Street Food.

Heat up 3 tablespoons of oil (you can use the oil previously used to fry pork loin if it is not too dark or dirty) in wok and fry shallots till golden brown. Remove fried shallots. Add garlic and fry till aromatic. Before garlic turns brown, add French beans and carrots and stir well for a minute. Sprinkle some hot water to just to keep moist. Add seasoning followed by noodles and stir evenly. Adjust seasoning to your preference. If you like the noodles with a little bit more sauce, add more water. Dish up, garnish with fried shallots and serve with pork chop strips.

However, it also becomes more popular in Hanoi these days. It is the great combination between many amazing stuffs such as fried potatoes, fried pork liver, pork stomach, half lean half fat pork meat, sliced Chinese sausages, roasted duck, cucumber, salad, roasted peanut and of course Pho Noodle. Many Hanoians fall in love with this so they bring this dish from this city to Hanoi. Brown vermicelli is soaked into crab broth, then add fried tofu, crab egg, ong choy, fried purple onion, roasted peanut and a little soy sauce. It will make your day better. Anyway, back to our delicious Vietnamese Street Food. When I prepared this batch (which gave me about 5 rice bowl-full), I actually worked harder to get a stronger tasting porridge than usual. On that morning, I bought 3 legs of chicken and got it deboned. I boiled the bones for about 1 hour and used the stock to cook the porridge. I only used meat from 1 leg of chicken and kept the other 2 legs for other use. If you are not keen to spend the extra work boiling chicken stock, you can use plain water instead.

The usual condiments to this Vietnamese Street Food are ginger, chopped spring onions and fried shallots. Just sprinkle them liberally and add a drop or two of sesame oil and you will get a really nice and homely tasting porridge. By the way, if you prefer to have a smooth consistency, I would suggest that you first soak the rice for 15 minutes and drain before cooking it. Once cooked, and before adding anything else into the porridge, switch off the flame and allow the porridge to cool down for about 15 minutes. Then add some water and boil again whilst stirring. You should get really smooth porridge then.

Bring chicken stock to boil. Add leg of chicken and allow cooking until just done. Don’t over cook the chicken or the meat will become tough. Remove leg of chicken and set aside to cool. Shred the meat with finger tips.Place rice in pot. Add chicken stock and bring to boil. Once boiling, reduce heat to simmer and stir occasionally until rice grains are cooked (puffed up or broken). Switch off heat and close lid and allow standing for 15 minutes.Meanwhile, fry the shallots till golden brown and set aside the fried shallots.Reheat porridge and add some water whilst stirring. Bring to boil until you get a smooth consistency. Add light soya sauce and salt to taste.Pour onto serving bowls, top up with white pepper powder, sesame oil, some shredded chicken, ginger, spring onions and fried shallots.

Grilled Octopus (Bạch Tuộc Nướng)
 
The first one I want to introduce is Grilled Octopus (Bạch Tuộc Nướng). From the early morning to late night, there are hundreds of street vendors and motorbike shop selling this Vietnamese Street Food. The coals there are always hot and attractive flavor is spreading out the streets. It makes the walkers cannot keep walking; they have to stop their step and turn to one shop immediately.

In my opinion, the best time and best place for enjoying this Vietnamese Street Food is on the beach and after you take the bath on the beach. It is so fantastic to eat one hot dish and drink one cool bottle of beer after taking bath. I suggest you one tip when choosing octopus that you have to choose the fresh and big one and wait until the sellers grill it completely.

The next dish is Squab Porridge (Cháo Bồ Câu). Squab Porridge is nutrient food for the health of eaters. This Vietnamese Street Food is really enjoyed by the visitors, especially the expat. Đồ Chiểu Street is the street where shop vendors and restaurants sell mostly this dish.  Some people suggested that the best shop vendors selling this food are located on the corner of Đồ Chiểu Street.

Besides of squab porridge, there are some dishes are made from squab that also attract the tourists such as grilled squab, fried squab. In some country, squab is a kind of bird that cannot be hunted and ate, however you can eat it freely in Vietnam.
